This January, Professor Kristina Olson leads a week-long journey through Emilia-Romagna, Italy's most storied food region, as part of a Mason study abroad program open to the public. Participants go behind the scenes at Parmigiano Reggiano and Prosciutto di Parma producers, taste balsamic vinegar straight from a Modena acetaia, and learn to make pasta by hand with a Bolognese sfoglina. The week closes at Casa Artusi in Forlimpopoli, the living museum and culinary school devoted to the father of modern Italian cuisine. No prior Italian is required, and scholarships are available for those who apply by October 1.
